January. Still meal prepping and some other highlights...

Thought we'd quit prepping didn't ya!!?

Nope, we're still at it.  We took a bit of a break during the holidays but we've been back at it now for a few weeks.  I haven't posted too much about it since we haven't done too many new recipes.

We've changed our ways a bit, starting to just put meals in one container for each dish and have found we prefer that better.  The only downfall is a couple of the weeks I think we made a little too much food.  We cut way back this last week realizing the error of our ways (Don't worry I didn't waste the food!  I shared with others!)  Anywhoo, we've been sticking to repeats of the same recipes but we have added a couple more.  My new favorite is this Sweet Potato Soup.  Seriously it's like the best thing ever.  We've made it a couple of times and I freaking love it!!!!!

Last week we made a Lemon Orzo Soup.  This was quite good but a little too much on the lemony side for me.  It was kind of like Chicken Noodle Soup with a lemon flair!  Another one along the lemon line was this Sheet Pan Chicken.

Another new recipe that I found pretty damn delicious and also made a shit ton was Edamame Quinoa Salad.  It was really good but made ALOT.

Yesterday we threw another couple of new ones in there.  A Chicken & Dumpling soup and another sheet pan Potato recipe.

I'm always surprised how we actually pull this off in my kitchen.  We swap between me and T's place but my place is always a little bit more of a bitch.  At least we solved the issue of my smoke alarm going off every 2 seconds.  Yesterday it was super windy and rainy.  We do have to leave my door open or the smoke alarm will go off, so it was kind of a fun contrast.  T actually used the freezing wind coming in the window to cool down the chicken! ha ha!

I couldn't wait for the week to start to dig into the delicious sweet potato soup!!  Seriously!  So fucking good!!!


The other big highlight was my cousin Erin in town!  Yay!  He always comes down for NAMM.  We had our usual meet up at Lazy Dog.


Yup, he's my favorite cousin.  I didn't make it out to NAMM, but I did meet up with him at a dive bar in Fullerton to see some blues musicians play with Kid Ramos.  It was a fucking great night of music!  The highlight was when Kim Wilson surprised everyone and took the stage.  He's one of my all time faves!  We've seen him at Doheny a couple of times.  I love him!!

We got our 1st girls night of 2016 in as well just this last weekend!

Great night, but we won't be returning to BJ's again.  The place was so friggin loud it was ridiculous!!  But us girls had a lovely evening screaming at each other and commenting on the kids that were obviously on their way to a dance and dressed like mini hookers.  This group of women is pretty awesome!

So January has actually been pretty mellow.  I'm trying to cut back a bit on spending so I can get my Bottlerock weekend all paid off before it comes.  I'm also starting to deal with all my beginning of year medical shit.  Got the lab work done.  MRI is coming.  Met with the Dr.  Get to meet with the specialist.  Blah blah.  This is my least favorite time.  I'm also uber sensitive now with my "Condition" and I'm afraid the MRI will make me sicker than usual.  Ugh.  Fingers crossed all is well.  I will say the one thing good that did come out of my visit with my primary is why I like him so much.  He pretty much practices like this starfish story (One of my favorite stories by the way).  We had some nice conversation and I'm really so happy with him.  Hopefully he'll fix me!






Remember back when I told you my dad is totally into mosaics now? Well - he's taking another class now and the project his teacher gave him was to come up with a different design in each square.  He cut every little piece of glass on this damn thing!  It's so impressive.  When he decided he wanted to give it to me he made the peace sign his last one.  I love it so much!




I'm also seriously considering signing up on E-Harmony for a few months.  I'm waiting until I hopefully get some $$ back from my taxes.  I know I said I never wanted to do the online thing, but it's starting to look like my only option.  We're in my birthday month and turning 40 is making itself heard loud and clear.  I keep hearing good things about it (I actually thought it was religious based but I guess not) and more than a couple of people have said even though you fill out like a zillion questions, you actually learn a lot more about yourself.  I like the sound of that.  If anything maybe I can learn some things about me.  If I actually date - well you'll be reading some funny blogs of my awkwardness I'm sure!

We're about to roll into the year of the Fire Monkey!  Let's hope this means good things yeah?  Happy February Friends!!!
