Made some sushi and found some eggs...

So I had a pretty good weekend!

 

Had a wonderful breakfast with my girls!  They showered me with gifts and love celebrating my upcoming nuptials!  I'm so lucky to have these ladies in my life after all these years!!

For my birthday Pat got us a sushi making class!  Now - he had actually got this for me for my 2020 birthday present, but as you well know - COVID hit a month later and we never got to go.  The place we were supposed to take a class at went out of business so there went that.  So - this year Pat tried again -and success!!

We weren't able to get in until this past Saturday but it was well worth the wait.  So much fun!  We took the class at Zen Maru Sushi in Long Beach.  The chef was super fun and there were 2 other couples (That were all friends) that were also very cool!

We got a surprise Saki tasting!  Apparently the 2 hour class included Saki tastings!  Yay! 
We learned the rice used is called Shari and it's quite the process to make.  You make the rice, then cook it again with Vinegar, Sugar and Salt.  You wrap the rolls in Nori.  And the rolls are actually called Maki Sushi!  If you want to try this at home, he highly recommends going to a Japanese Market.  There you can get Sushi Grade Fish.  You can't just roll into any grocery store and get fish, you have to get "sushi grade" in order to make sushi.  I think Pat and I may try that sometime at home!  Could be a fun home date night idea for sure!  

We made a California Roll (which had the rice on the outside), a Tempura Roll and a Rainbow Roll.  Such a fun evening!

This weekend also brought us Easter Sunday.  After a 2 year hiatus, (Thank you COVID) my mom was able to throw her annual Easter Party that is one of her favorite events!  About 15 or so folks were there - and not one kid.  Yet - 533 Easter Eggs were stuffed and hid along with some games and scavenger huts for us "adults" to find.  I failed on taking pictures but luckily others did - so here is what I stole to share.

Such a wonderful day of noshing, drinking, hunting eggs but most of all spending time with friends and family while enjoying the magic that is my mother!

San Clemente Swooning...

 As you know, my mom has a timeshare she has once a week down in San Clemente.  Her best friend Keri has one too!  Well - as a wedding gift Keri gifted us Thur-Sun down at the beach.  It was just perfect!

She thought maybe we could use a getaway while we're trying to plan the big day.  She didn't realize this couldn't have come at a better time.  Pat & I have a lot going on right now and we desperately needed this break.  We agreed to totally check out from the stress and enjoy the few days away!

We ate, we drank (probably a little too much...), we napped, we hiked, we walked but the main thing we did was chill.  Most of the hours of the days were spent sitting out on the balcony watching the beautiful ocean and enjoying the peace.
